Block of cheese
Your question intrigued me. Never heard of filéost.
My research brought up the Arla pages below.
Seems like filé is the opposite of sliced. So "block of" or "slab of" might fit. Or just call it cheese if it fits the text, since that is what cheese is in most peoples' minds.

My finger slipped when adding a note to Sven's answer. Problem with having a broken right arm, controlling mouse with left hand ...
But yes, I think Sven's answer is more likely to be correct than mine. A filé is usually "cut clean".
