So that means if I go for the 1920x1080 I'll also get smaller tool bars, menus, etc. in Word and other applications? I already find them quite small on my current screen, and this text I'm now typing could be larger too.

you can adjust the font size as follows:
(note: I use Polish Windows 7, so I don't know if my translation of option titles is compliant with English Windows 7):
Control panel > View and personalisation > Display > Improve display legibility.
In this tab, you can chose the default 'smaller' (100%) or 'medium' (125%) size.
