This is a deliberately generic suggstion. The "parcours de professioanlisation" is a specific term ( for exaemple : http://www.lyc-romane.ac-aix-marseille.fr/spip/spip.php?rubr... but it does translate in different ways depending on the individual.

"Sandwich course" is quite specific to my UK mind and is best translated by "en alternance". Sandwich courses and a "formation en alternance" set up a specific calendar of training and classroom time. A "parcours de professionalisation" does of course have atimetable, but there is a greater accent on tailoring the various provisions to fit eahc individual.

Also, the notion of "professionalisation" implies a continuity of a process. I like François' suggestion of "professional improvement track/path" as there is the idea of progress, process, continuity. However, I think that the term "parcours" includes path and track but alos the idea of "programme" and is found right through the education system, particularly in higher education in France.

In a nutshell, the idea of the French is that there is a programme with specific objectives, aiming to improve the individuals chances on the employemnt market. Within the programme where classes and on the job training will be included, there is a certain amount of flexibility to cater for each individual's needs. Rather than "improvement", it comes closer to "development". Oh dear, that's not very nutshelly after all.

That's why I retain a lisghtl international EN rendering with "professionalisation" (continuity, improvement, development) and "programme"(cover on the job training (stages) and classroom time).
