\"Assay\" is of a more technical register than \"test\", it is true, while \"nutritional\" is more common language than \"bromatological.\" The difference is that this latter term is very obscure, unknown to all but a very small percentage of English speakers.

In fairness, I should point out that there is absolutely nothing wrong with \"nutritional test\" either.
