Lagringen sker som nämnts på fat (tunnor) av trä, och under lagringen säger man att whiskyns smak mognar. Detta sker dels genom att whiskyn tränger in och ut ur träet och på så sätt tar smak av träet, dels genom att delar av whiskyn avdunstar, vilket kallas "änglarnas andel" – varje år avdunstar cirka två procent av whiskyn.
